Chicken and Cheerios!

Finally, some of the healthy eating talk in our house is starting to come to fruition!  We will continue on our quest for a healthier and Re-Fab-u-lous lifestyle, and I will pass on those recipes that we have found to work here.

In our quest to eat healthier, we have tested and tried, over and over, this awesome baked chicken nuggets recipe.  All ages love this, and you can substitute any flavor of Cheerios.  My son actually asks for it! 

Just wanted to share, hope you enjoy as much as we do.....

 
Crunchy Chicken Nuggets
Prep Time: 15 minutes
Cook Time: 25 minutes
Yield: 4 servings

Ingredients
  • 2 cups Cheerios® cereal
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon chopped garlic
  • 1/4 cup milk
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons butter, melted
Instructions
  1. Heat oven to 400 degrees. Spray a 9x13-inch pan with cooking spray.
  2. Finely crush cereal by placing in a plastic bag 
  3. Crush with a rolling pin. (I find the end usually works better)
  4. Stir together cereal, salt, pepper; set aside. 
  5. In medium bowl, whisk together milk, honey, garlic, and mustard until blended.
  6. Dip chicken into milk mixture.
    Then coat chicken with cereal mixture. 
    Place chicken in pan and drizzle with melted butter. 
  7. Bake 20 to 25 minutes or until crust is golden and chicken is no longer pink in center.
